Beet Salad Recipe For Two!

BEET SALAD INGREDIENTS:

8 Medium Size Red Beets

1 Tbsp. of Cider Vinegar

1 Bay Leaf

1 Sprig of Parsley

1 Sprig of Thyme

Fresh Basil

1 Bunch of Chives

2 Shallots Chopped

2 Tbsp. of Sherry Vinegar

3 Tbsp. of Extra Virgin Olive Oil

1 Small Pkg. of Goat Cheese

Fresh Ground Black Pepper & Salt to Your Taste

In a pot, place the red beets, a bay leaf, sprig of thyme, sprig of parsley, 1 tbsp. of cider vinegar, salt to your taste, and let simmer until fork tender.

When ready, allow to cool, then take a cloth and rub around the outside of the beets until the skin falls away.

Now cut the beets into thin slices about 1/8 inch, in rounded and flat pieces, then place in a bowl.

Season with sherry vinegar, extra virgin olive oil, chives, fresh black pepper and salt to your taste.

Next add the chopped shallots into the salad mix and toss very well.

Plate each salad with a base of the biggest red beet slices overlapping each other (like collapsed dominoes) in a circle. leaving a small hole in the center.

Cut the rest of the beet slices into quarters and build a pile of beets in the center of the circle of beet slices, as in the photo.

Top them off with bits of goat cheese, chives, some fresh basil, making sure to get some around the middle, and you are ready to enjoy your red beet salads!
