Cucumber Salad Recipes for Two!

3 Fresh Dill Sprigs

3 Tbsp of Chopped Dill

1 Whole Cucumber

1 Half of a Small Red Onion

Dill Cucumber Salad Preparation:

First cut off both ends of the onion and then slice the rest of the onion into thin strips (this is called onions julienne).

Now take the whole cucumber and cut lengthwise into four quarters, then remove the seeds by carefully slicing downward between the flesh and seeds. With the skin side up, cut the cucumber strips on the bias (45 degrees) into 2 inch segments.

Place the onion julienne, cucumber segments and chopped dill in a bowl. Next add the rice wine vinaigrette (see recipe below). Toss the entire ingredients well, then add some salt and pepper to your taste.

Decorate the top of the Cucumber Salad with Dill Sprig and it’s ready to serve 2.

NIDIA’S RICE WINE VINAIGRETTE RECIPE FOR DILL CUCUMBER SALAD ABOVE

1/4 Cup of Rice Wine Vinegar, 1 Tbsp of White Sugar, 3/4 Cups of Olive Oil (or Canola Oil), 2 Tbsp of Chopped Dill, 1 Tbsp of Kosher Salt and 1/2 Tbsp of Black Pepper

Mix all the above ingredients together (except the olive oil) in a blender. With your blender still running, slowly pour in the olive oil and then add salt and pepper to your taste.
