Lettuce Salad Recipe For Two!

Boston Lettuce Salad Recipe with Raddiccio Leaves, Navel Oranges, Roasted Pine Nuts and a Citrus Dressing for Two!

SALAD RECIPE INGREDIENTS:

1 Head of Boston Lettuce Leaves

1 Head of Raddiccio Leaves

1 Box Seedlings of Your Choice

2 Navel Oranges (separated into segments)

1/2 Cup of Roasted Pine Nuts

Citrus Dressing

First spread out the pine nuts on a small cookie tray, roast in your oven at 350 degrees F. for about 10 minutes and allow to cool. Then zest the skin of 1 navel orange and 1 lemon.

QUICK CITRUS DRESSING RECIPE AND INGREDIENTS:

Orange Zest from 1 Orange

Orange Juice freshly squeezed from 2 Oranges

Lemon Zest and Juice freshly squeezed from 1 Lemon

1 Tbsp. of Honey (add ½ tbsp if you prefer it sweeter)

1 Tbsp. of Dijon Mustard

3/4 Cups of Canola Oil

1/4 Cup of Champagne Vinegar

Pepper and Salt to Your Taste

Put the orange zest, orange juice, lemon zest and lemon juice at the same time in a blender.

Now add the dijon mustard, honey, champagne vinegar, pepper and salt.

Start the blender to slowly add the canola oil with the blender still running and you’re done with the dressing!

ARRANGING THE PLATE!

Next arrange both the boston lettuce and raddiccio leaves in the center of the plates creating a ball shape of mixed colors and place the orange segments around the outside as in the pictures above.

Gently sprinkle the seedlings to fill in the center of the leaves arrangement slightly showing and slightly hidden within the leaves for decoration..

Sprinkle the roasted pine nuts on top of the orange segments for decoration and added flavor.

Then pour some citrus dressing on the salad centers and over top of the orange segments and pine nuts to your individual tastes.

You’re now ready to sit and enjoy this delicious and healthy salad combination!
